I have a 3yr old GSP I have trained for basic commands and have gun broke but haven't trained him on birds yet (I got him while I was still in collage with no time to hunt :( ). What would be the best way to train him as a quail dog?

This is kinda putting the wagon before the horse. He needs some birds! Start the dog as you would a puppy with bird introduction, getting him real excited about them. Then get him into some good flying quail, either pen or wild an get him pointing. Not until then do you need to worry about any training....

sorry for a late post but i can realte to your question. My first GSP was placed in my home as an older pup, so to speak he was a lil over two when Dilbert entered my life. He came from great stock and had been a "show" dog his life before my home. I hooked up with Kurt Hartington and with his awesome dog Kane took Dilby out to Wilmington Ohio to run about the bird infested CherryFarms. With Kane leading it took about an hour for Dilbert to figure out what Kane was after. A few more trips and Dilbert was hunting. Now he does nto have the refinement tha Kane and other well trained GSPs have but the nose knows and he hunts. yea he will creep and often isn't steady on the flush but he is fun as heck to watch and really to me thats the point of having a dog in the field with you. So as it has been suggested get him around some birds and just go hunting!
