Frozen birds for training....

I have Dutchess in a FF class, meet once a week. In class, Dutchess will hold small frozen duck in her mouth for as long as I ask, without any chewing at all. At home, she works with frozen pigeon, and almost always trys to tear it apart. This is the part in FF training where she is learning to HOLD bird in mouth without chewing. She is reaching for it fine. The ear pinch is used, and works when needed. The class has 8 dogs total. each are kept in kennels and we pull one dog out at a time to work with. Dutchess make no attempt to chew while in class. But at home will chew like she is on a 3 month strave.

Does the different birds matter that much? Is this normal behavior for dogs...good in class but sloppy at home?
