What size steel shot will have the same knock down power of 71/2 lead?? What size steel shot would you use for quail?

I usually use 2 sizes bigger shot when using steel when compared to lead (4 vs 6, 6 vs 8). For quail I would look into some of the other nontoxic loads, I need as many bbs in the air as possible.

Walmart usually has WW steel 7s this time of the year.

I feel your pain fellow Californian. I'm still shooting the equivalent sized shot for quail sized birds, 7.5s for Californias and 6s for mountain. Remember steel chokes tighter than lead so you may want to get a wider choke when you make the switch. I'm transitioning to reloading when the lead ban applies to the chukar country I hunt so I can load bismuth or one of the various "heavy" shots.

Who has reload charts for steel and bismuth? The real sad part is I have a collection of old 16s. One o/u is my favorite quail gun.
