2 pounds of ground meat of your choice. I use 50-50% turkey and pork that I buy already ground at Kroger.
2 pieces of bacon, cooked crisp on the microwave, crumbed as fine as possible.
½ to 1 tablespoon salt. I use 1/2
2 teaspoons black pepper
1 teaspoon sage
1 teaspoon dried parsley flakes
¼ teaspoon nutmeg
1 cup ice cold water
Add all ingredients and mix thoroughly.
The quality of the sage is a huge component of how this turns out.

I used to make a sage breakfast sausage where I used sage grouse and pork. Can't do it any more due to the limit on sage grouse but it had plenty of sage taste!

We have made sage sausage for years and all we use is sage and salt. Still my favorite bar none.
