First the disclaimer: I believe in using dogs for the purpose the were bred. Airedales were bred for fur. So for birds I would look towards the pure pointing breeds or the versatile breeds. Here is what I have learned. Doves are not a good bird to introduce a dog to hunting/retrieving. The feathers pull out of the bird very easily and stick to the dogs mouth. How about a boykin? I know they do well on doves and I would imagine they are used quite extensively on squirrel in the Carolinas where the originated. They are the right size to hang out on a boat and they love water.
