One of my GSP's was afraid of fireworks and thunder until the day he died. If a dog is afraid of these things, it will not get better with age. For what ever reason, it bothers some dogs and some it doesn't. Nothing to do with age or experience.

Remember the dog is much more sensitive to different noises and vibrations than we are. The shotgun is very controlled in comparison to an aerial explosion such as fireworks or thunder. I feed my dogs Kirkland chicken and rice. Seems to do the trick. We switched from pro plan when my pup was 6 months, he had a bad reaction and the vet said it could or could not be caused by the food, we took the safe route and switched. Never looked back, plus the savings on my wallet is nice. Sav...

You don't handle them...You just go look for them, unless you are talking about being able to call them in (if they are within hearing range) and when I was young I was OK with that but no more. All good advise but you need to get started. The longer you let him chase, the harder and longer it will take to correct, especially if he is catching some of the birds when they land, as you implied.
