Play the wind Man. Take the dog in across the wind (ie wind S to N, bring dog in E to W) and when he smells it, you should be able to tell. In that scenario it should be an abrupt left turn.

I grew up around AQH and cattle, but don't know the first thing about gaited horses, horseback trials, etc. and it would be nice to have something here. IMO it could tie in nicely.

laying off a day wont hurt a thing. You are exactly right...because of work, rain, and travel, I had to take 10 days off of training, but my dog progressed when I got back too him.
