Try putting a light leather glove on, say fetch, tilt your hand to the side, and have him hold your gloved hand. If he starts to bite too hard, verbally yell "Ouch"!. That also can work. I'd go with a Stevens 311 Model E. I just sold my 311A for this one to have a longer barrell but both are built solid for the money. They are not too light or too heavy. Anything Richard A. Wolters. Go to amazon.com and buy used ones for under 10 bucks. Gun Dog and Water Dog use simple trainig methods and they have good pictures and easy reading. obviously there is a lot of controversy on his books but alot of trainers use some of his techniques. find out what works...
